A collaboration between the Burder family and winemaker Dominic Valentine, Nimbostratus is a special project wine that seeks to create a distinguished & modern example of cold climate chardonnay. With over 23 vintages under his belt, Dom now makes wine under his own label Valentine Wines - specialising is riesling, grenache & rose. With chardonnay making experience in the Yarra Valley & Margaret River, Nimbostratus couldn’t be in better hands. The (now sold out) 2016 was described by Ned Goodwin MW as ‘‘among the finest white wine tasted of late. No wonder Australian Chardonnay such a force.. coiled, energetic and flavourful, a textural quotient of dreams’’. Don’t despair though, the 2017 is looking sharp…
MODERN, FLAVOURSOME, AGE WORTHY, REFINED
*NEW RELEASE* Continuing our commitment to bottle-age prior to release, we are delighted to finally launch the 2017 vintage. For those familiar with the 2016, this wine is cut from the same cloth, but is finer and a little more primary - although it will of course intensify over the next few years. After a tricky season, the handpicked fruit was whole bunch pressed and barrel fermented. Then it was matured on lees for 9 months in French oak puncheons & barriques (25% new); with no stirring or malolactic. The 2017 is a true reflection of the Whitlands region: a finely tuned, all natural acid core, seamless oak & true cold climate flavour intensity. Lees derived texture fleshes out the palate. We think it’s pretty delicious!

We are one of Australia’s only grower-producers of bottle fermented sparkling wine. We make our sparkling wines in the French ‘méthode champenoise’ style, borrowing the winemaking techniques from Champagne : this means we use pinot noir, chardonnay & pinot meunier in various ratios; 100% of our fruit is grown on our own vineyard. We ferment base wines in old oak and re-ferment in bottle. After the second fermentation the wines age on their yeast ‘lees’ from 2.5 - 5 years depending on the wine style. It sounds simple but it’s quite precise - not to mention time consuming & absurdly expensive. But, we wouldn’t have it any other way. The finesse, elegance & character of wines made in this method is worth it.
BRIGHT, INTRICATE, CHARMING
This is the wine you open while you’re deciding what else to open! NV stands for non-vintage meaning that this wine is a blend from a few different seasons – in this case, 2013 and 2015. It was hand picked from our high altitude Whitlands vineyard and is a blend of Pinot Meunier 45%, Pinot Noir 40%, Chardonnay 15% . This wine was made in the same way as the vintage – with full barrel ferment, however the yeast ageing is less, at two years (opposed to four). This keeps the wine bright and more fruit focused. As it says on the label, it’s really quite charming – nice and dry, bright strawberry flavours with a nice savoury kick to it.

LUXURIOUS, COMPLEX, LAYERED, MEMORABLE
This wine is indeed an Assembly: the individual parcels of fruit, the blending after the first ferment, the blending of the dose prior to disgorging – not to mention the amount of people who came together to help me bring this wine out into the world. An incredible effort over the last five years. A heartfelt thanks to everyone involved – this is the most exciting wine to date.
This wine is made entirely from 2013 fruit grown on our vineyard and has spent 55 months on lees. The fruit was handpicked and fermented in old pinot noir barrels with wild yeast; a couple of barrels went through malo. The base wines were blended to 60% Chardonnay, 30% Pinot Noir & 10% Pinot Meunier and dosed with 5 grams per litre. It’s pretty delicious & a little bit fancy!
